Choo Choo Birthday Cake

Whether you are a youngster or only young at heart, you are likely to be a fan of the Choo Choo bar. Ingredients for One Medium Sized Cake:

225 gram of softened unsalted butter
225 grams caster sugar
225 grams of self raising flour
1 teaspoon baking powder
4 eggs

Instructions:
Preheat your oven to 180 degrees. Cream the sugar and butter together until it is light and creamy. Beat in each of the eggs slowly and once they are incorporated fold in the flour and baking powder.

Divide the cake mixture into four 25 x 8 centimetre bar tins. Bake for 25 to 30 minutes until golden brown. Allow the all the cakes to cool fully on a wire rack before assembling and decorating.

Making the Train:

You will need a 225 gram sponge roll,
red, blue, apricot, purple and green food colouring
1 package of thin liquorice
Chocolate sprinkles,
20 round chocolate biscuits
A pack of chocolate buttons
1 Ice cream wafer
A few pieces of popcorn
Choo Choo bars for decoration
A wooden skewer, a pipe cleaner and a serving board.
You will also need buttercream for filling and icing.


Cut each of the bar cakes vertically to create eight pieces. Five of these pieces will be needed to make the back of the engine and the tops of the train carriages. The remaining three pieces need to be cut horizontally to create the bases of the carriages and the engine. The piece needs to be cut to create a quarter size piece.

Create the engine smoke stack by cutting a four centimetre slice off, holding it upright and using a plain cutter. The rest of the sponge roll will be needed to make the engine.
Use the buttercream as the glue to assemble your train. You will need to tint small amounts of the buttercream different colours for each of the carriages. Cover the sides and tops of the carriages and engine. Outline the tops of the carriages and the engine with thin liquorice.

Cover the sides and top of your smoke stack with red tinted buttercream and coat with the chocolate sprinkles. Use your wooden skewer to make a hole through several pieces of popcorn and thread them onto the pipe cleaner. This should be inserted into the smokestack.

Use a Choo Choo bar to create the effect of railway sleepers. Use the chocolate biscuits to represent wheels and use the chocolate buttons for additional detail. Finally, attach a strip of wafer to the front of the engine as a “cow catcher”.

Sour Peach Hearts Inspired Bundt Cake

Sour peach hearts and sour peach heart lollies are a popular sweet treat. Ingredients to Make the Bundt Cake:

210 grams of flour
1 teaspoon of baking powder
½ teaspoon of baking soda
Pinch of salt
75 grams of softened unsalted butter
125 grams of sugar
2 eggs
½ teaspoon almond extract
110 millilitres of sour cream

Ingredients for the Filling:
50 grams of sugar
50 grams of brown sugar
½ teaspoon of nutmeg
½ tablespoon of ground cinnamon
¼ teaspoon cloves
½ tablespoon cocoa powder
20 grams of finely chopped toasted almonds
3 small peaches peeled and cut into chunks


Instructions:
Preheat your oven to 180c and grease your bundt cake tin.
Mix all of the filling ingredients together except the peaches and set this mixture aside while you prepare the cake batter.

 Cream the butter and sugar together until it's fluffy and light. Beat in the eggs and add in the almond extract. Sift together all the dry ingredients in a separate bowl and add this into the butter mixture alternately with the sour cream. Beat the mixture until well blended.
Add a third of the cake mixture into your bundt tin, spread it evenly with a spatula to coat the bottom of the tin. Sprinkle over a third of the filling and dot a third of the peach chunks over the top. Repeat these process twice more, reserving a couple of tablespoons to cover the final layer of filling and peach chunks.

Bake your Bundt cake for approximately an hour or until a skewer comes out clean when inserted into the centre of the cake. Allow the cake to cool in the pan for approximately thirty minutes before turning out onto a wire rack to completely cool.

To decorate your cake, either dust with icing sugar before serving or create a light icing with sifted icing sugar and water to drizzle over the top of the cake. You can add more colour by dotting over some sour peach hearts, either whole or in cut into pieces.

White Chocolate Raspberry Scones

560 grams of flour
175 grams of granulated sugar

225 milliliters of sour cream
175 grams of fresh raspberries
2 eggs
4 teaspoons of almond extract
1 egg diluted with 2 teaspoons of water to create an egg wash



Method:
Whisk the flour, baking powder, salt, baking soda and sugar together in a large bowl. Cut the chilled butter into fairly small pieces and add them to the flour. Using your fingers rub in the butter until the mixture resembles crumbs. Fold in the white chocolate chips.

In a different bowl, whisk the eggs, almond extract and sour cream together until fully incorporated. Add the mixture to the flour using a fork to combine until you form large clumps. Gently fold the raspberries into the mixture taking care not to crush the raspberries. Some of the berries will break, but you don’t want a raspberry puree. Use a rubber spatula or hands to form the dough into two balls. The dough will be quite wet but wrap each ball in plastic wrap and chill for at least a minimum of an hour or until it has become easier to work with. At this point, you can store the dough in the fridge for up to two days.

Preheat your oven to 200c and prepare your baking sheets by lining them with parchment paper.

Flour your work surface and pat each of the dough balls down until they are 1.5 centimetres thick. Use a sharp knife or cookie cutter to shape your scones. Although traditional scones are circular, these white chocolate raspberry scones look very attractive as triangles. Place the scones on the baking sheets but be sure to leave a gap of two centimetres around each scone.

Brush the tops of each of your scones with the egg wash and bake for approximately fifteen minutes or until they are a light golden brown colour. Be careful not to over bake the scones as they will quickly become dry. Allow the scones to cool o a wire rack.
To decorate melt 75 grams of white chocolate chips and drizzle the melted chocolate over the scones. Allow the chocolate to set before you store them in an airtight container. The scones taste the best within twenty-four hours, but they can be stored for up to two days.

Method:
Line a cupcake tray with paper muffin cases and preheat your oven to 170c.
Sift the cocoa powder, flour, salt and baking powder and mix in with the butter and sugar until everything is well combined. Whisk the egg, vanilla extract and milk in a separate bowl or jug. Add to the flour and butter mixture and slowly beat in until the mixture is smooth and creamy.
Spoon into the paper cases until they are ¾ full. Bake for twenty to twenty-five minutes until a skewer comes out clean. Allow the cupcakes to cool slightly while in the tray before you allow them to cool completely on a wire rack.

To decorate, whisk the butter and icing sugar together until smooth and creamy. Beat in the vanilla extract. You can use a pallet knife to spread the frosting on top of each cupcake or pipe it into fluffy clouds. If you are feeling particularly artistic, you can create a blue sky with coloured frosting before piping on your clouds.

How to Make the Best A&W Root Beer Float

An A&W Root Beer Float has been a popular treat for decades. The A&W Root Beer Spider or float originated from Philadelphia in 1874. The float was reputed to have been created by Robert McCay Green when he ran out of ice for his drinks stall and used the vanilla ice cream from another vendor to create a new drink.
