Making the Cake:
To make a cake inspired by a classic Choo Choo bar,
Perth sweet enthusiasts will need 225 grams of flour, 85 grams cocoa powder,
350 grams sugar, 1 ½ teaspoons baking soda, 1 ½ teaspoons baking powder, 2
eggs, 125 millilitres vegetable oil, 250 millilitres milk, 250 millilitres hot
water, 2 teaspoons vanilla extract, 2 bars of liquorice. This will make an
eight-inch round cake.
Preheat your oven to 180 degrees. Chop the liquorice into small
pieces and melt into the hot water. In a separate bowl mix all of the dry
ingredients and beat in the eggs, milk and oil until well combined. Gradually
add the liquorice water to the batter until it is smooth but watery.
Divide the mixture into two eight inch prepared cake tins. Bake
for approximately thirty minutes or until a skewer can be inserted and come out
clean. Allow to cool completely before icing.
Decorating the Cake:
This cake is perfectly complemented with a rich chocolate
ganache. This ganache can be made by melting 200 grams of good quality dark
chocolate and whisking in 200 millilitres of double cream. This process should
be done slowly, so it is a good idea to melt the chocolate in a bowl heated
over a pan of hot water. Be sure not to over-whisk as this will cause the
chocolate to seize. Allow the ganache to cool and thicken, before using it to
fill and ice the two halves of the cake. For added decoration, consider
scattering a Choo Choo bar chopped into small pieces over the top of the
ganache before it has properly set. Allow the ganache to cool completely before
attempting to slice.
This cake makes a fantastic and sophisticated birthday cake or
